- In a large bowl, crack the eggs and add the salt. Beat with a hand whisk until combined.
- Add half of the milk (300 ml) and mix gently.
- Add the flour along with the baking powder (if using). Mix well until all lumps are gone.
- Add the rest of the milk and continue mixing.
- Pour the boiling water slowly while mixing. This will help you get a smoother, lighter dough.
- Add the vegetable oil and mix again.
- Let the dough rest for 10 minutes.
Cooking
- Heat a frying pan and lightly grease it with oil.
- Pour a portion of batter and spread it to form a thin pancake.
- Cook over medium-high heat until the edges begin to brown.
- Turn it over and cook the other side.
- Repeat with the rest of the dough.
Assembling the filling
- Mix the grated cheese, chopped sausage, and dill.
- Place a portion of the filling on each warm pancake.
- You can fold them, roll them up, or serve them open, as you prefer.
