Step-by-Step Instructions
- Prep & Preheat
Preheat oven to 350°F (175°C). Line baking sheets with parchment.
Drain pineapple thoroughly; reserve 2 tbsp juice if making glaze.
- Make the Dough
In a bowl, whisk flour, baking soda, and salt.
In a large bowl, cream butter and sugar until light and fluffy (~3 mins).
Beat in egg and vanilla until smooth.
Mix in drained pineapple.
Gradually add dry ingredients; mix until just combined.
- Scoop & Top
Roll dough into 1.5-inch balls (about 2 tbsp each).
Place 2 inches apart on baking sheets.
Gently press one maraschino cherry into the center of each ball.
- Bake to Perfection
Bake 10–12 minutes until edges are golden but centers look soft.
Cool on sheet 5 minutes, then transfer to wire rack.
