To prepare this chicken sausage you will need:
- 1 chicken (preferably with the bone in for a tastier broth)
- 1 carrot
- 1 onion
- 2 bay leaves
- Peppercorns to taste
- 3 tablespoons of salt
- 1 tablespoon of oregano
- 1 tablespoon of red pepper (or paprika)
- 1 tablespoon of cumin
- 2 cloves of chopped garlic
- 300 ml of chicken cooking broth
- 10 grams of unflavored gelatin
- 1 cooked beetroot
- 1 clean 1.5 liter plastic bottle
- Plastic film
Step 1: Cook the chicken
In a medium-sized pot, place water until it is about half full and bring it to a boil.
When the water is hot, add the chicken along with:
- the carrot
- the onion
- bay leaves
- peppercorns
- the 3 tablespoons of salt
Cover the pot and let it cook for at least an hour . This process will allow the chicken to become very tender and the broth to infuse with all the flavors of the vegetables and spices.
Step 2: Shred the meat
Once the chicken is fully cooked:
- Remove it from the pot.
- Let it cool for a few minutes.
- Crumble it into small pieces.
Place all the shredded meat in a large container or bowl.
