To prepare this chicken sausage you will need:

  • 1 chicken (preferably with the bone in for a tastier broth)
  • 1 carrot
  • 1 onion
  • 2 bay leaves
  • Peppercorns to taste
  • 3 tablespoons of salt
  • 1 tablespoon of oregano
  • 1 tablespoon of red pepper (or paprika)
  • 1 tablespoon of cumin
  • 2 cloves of chopped garlic
  • 300 ml of chicken cooking broth
  • 10 grams of unflavored gelatin
  • 1 cooked beetroot
  • 1 clean 1.5 liter plastic bottle
  • Plastic film

Step 1: Cook the chicken

In a medium-sized pot, place water until it is about half full and bring it to a boil.

When the water is hot, add the chicken along with:

  • the carrot
  • the onion
  • bay leaves
  • peppercorns
  • the 3 tablespoons of salt

Cover the pot and let it cook for at least an hour . This process will allow the chicken to become very tender and the broth to infuse with all the flavors of the vegetables and spices.


Step 2: Shred the meat

Once the chicken is fully cooked:

  1. Remove it from the pot.
  2. Let it cool for a few minutes.
  3. Crumble it into small pieces.

Place all the shredded meat in a large container or bowl.
