1. Cleaning and preparation

Clean the sardines well: remove the head and guts, and rinse them carefully under cold water.
Dry them thoroughly with paper towels.

Carefully remove the central bone and fins to obtain clean fillets. Pat them dry again lightly.

2. Marinade

Sprinkle the sardines with lemon juice.
Add salt and pepper to taste.
Let them marinate for 30 minutes to absorb the flavor.

3. Prepare the filling

Melt the butter.
Mix the grated cheddar cheese, minced garlic, dill or parsley, and breadcrumbs.
Stir in the melted butter until you have a moist and aromatic mixture.

4. Fill and roll

Place a spoonful of the filling on each sardine.
Roll them up carefully and secure them with a toothpick.

Grease a baking dish with butter.
Arrange the rolls neatly.

5. Baking

Sprinkle with fish seasoning if desired.
Drizzle lightly with olive oil.
Bake at 180°C for 30 minutes, until golden brown and crispy on the outside.

How to prepare aromatic rice

  1. In a pot, sauté the onion, garlic, carrot, and bell pepper in oil or butter.
  2. Add the previously washed rice and mix well.
  3. Add the 500 ml of water, salt and pepper.
  4. Cook covered over low heat until the water evaporates and the rice is tender.

Fresh salad to balance the dish

Mix cherry tomatoes, cucumber, bell pepper, olives, and feta cheese.
Add fresh dill, salt, pepper, and a generous drizzle of olive oil.

This salad adds freshness and perfectly balances the intensity of the fish.

Tips and recommendations

  • Dry the sardines very well before marinating them: this improves the final texture.
  • If you don’t have cheddar, you can use mozzarella or grated semi-hard cheese.
  • For a crispier touch, add a little more breadcrumbs on top before baking.
  • If you prefer a lighter version, you can reduce the butter and use more olive oil.
  • Serve with extra lemon to enhance the flavor.

With simple ingredients and a traditional technique, sardines can be transformed into a complete, tasty, and nutritious dinner. A simple recipe that proves that authentic, homemade food always has a special flavor.
