- 2 large flour tortillas

- Grated cheese (amount to taste)
- 1 chopped onion
- Frying oil
- Chopped celery (optional)
- 4 eggs

- 1 can of drained tuna
- Chopped cilantro to taste
- 1 sliced tomato
- Mozzarella cheese (sliced or grated)

Step-by-step preparation
1. Prepare the base
Lightly grease a frying pan or baking dish with olive oil and place a flour tortilla in it as a base. Sprinkle some grated cheese over the tortilla so that it begins to form a melted layer.
2. Sauté the vegetables
Chop the onion and sauté it in a pan with a little oil until translucent. If desired, add the chopped celery and cook for a few more minutes. Set aside.
3. Mix the filling
In a large bowl, beat the 4 eggs.
Add salt, pepper, and Italian herbs.
Stir in the drained tuna, chopped cilantro, and sautéed vegetables. Mix well until everything is combined.
